Tastes Like
If you’re a fan of a classic chocolatey coffee but are looking for a touch of sweetness and a fruity zing, you’re in for a treat with this brew! Roasted to a medium level, it kicks off with a smooth milk chocolate base and a swirl of honey, and to top it all off, you’ll discover the refreshing notes of red berries and a crisp green apple. Drool!

Behind the Scenes
This coffee, known as Ki-Saya, was the first organic specialty coffee cultivated in Chiapas in 2025 by green coffee importers Covoya. The name derives from the combination of “Ki,” which means tasty, and “Saayab,” meaning nature in the Mayan language. This choice symbolises the connection between the dedication of the growers and the quality of land required to produce these beans.
With 44% of the population being indigenous, it is vital to nurture long-lasting relationships based on trust. Covoya has been working with the farmers in Chiapas for 15 years and has made bonds with communities and producers living here.
This relationship has meant they can offer training and advice, which in turn improves the quality of coffee grown. This not only helps Covoya get access to higher-quality coffee beans but also helps the farmers gain a high return for their efforts.
This all comes down to quality control. Only the best cherries are selected and handpicked before being de-pulped and fermented for 12-17 hours before being washed and dried on large patios. The coffee is then sorted, removing any bits of dried cherry skin or over-fermented beans, and taken to be milled.

What does the score mean?
We only source and roast speciality coffee here at Two Chimps. Cupping is the snazzy process that decides if a coffee will become speciality. It determines the coffee’s score, and the coffee makes the cut as speciality if this score is 80 plus. If the score is below 80, it won’t get the ‘speciality’ title (it’ll be commodity instead). Professional Q Graders score each coffee on factors such as taste, aroma, mouthfeel and more.
