Vanilla. It\u2019s such a beautiful flavour. Sweet like marshmallow and ever-so-slightly fragrant, vanilla is the perfect pairing to many of our favourite flavours. Including our go-to summer drink \u2013 the iced latte!<\/p>\n

Vanilla iced lattes<\/strong> are a staple on all good coffee shop menus. They\u2019re lovely and refreshing on sunny days but are equally good all year round. Because something this tasty shouldn\u2019t be kept to summer!<\/p>\n

Most shop-bought vanilla lattes are flavoured with artificial syrups. We\u2019re not keen on that vanilla-cum-e-number taste, so found a nifty way to make vanilla syrup at home. It\u2019s subtle, sweet and wonderfully versatile \u2013 why not try swirling it into yoghurt or mixing it with your Earl Grey<\/a>? The syrup keeps for a month in the fridge, so you\u2019ve got plenty of time to experiment!<\/p>\n

Just a quickie before we get to the recipe\u2026 some handy top tips for making iced lattes!<\/p>\n

Firstly, do make sure you use espresso<\/a> or another strongly brewed coffee. Remember that the ice will melt, so you need that extra caffeine kick to offset the dilution. Fancy an iced latte with even more boost? Try using ice cubes made from coffee rather than water. Or cool down with an indulgent coffee float \u2013 just top your vanilla iced latte with a big scoop of ice cream. Flake optional (but recommended!).<\/p>\n
