Behind the Scenes
Huila is one of the top coffee-producing regions in Colombia, thanks to its volcanoes and mountains, which provide nutrient-rich soil and high altitudes. However, it doesn’t just produce standard, commodity coffees; we’re talking about specialty brews (of course)!
Specialty Arabica from Hulia is known for its perfect balance of acidity and sweetness, and in 2009, the name Dulima was created to capture the flavour profile of this coffee. This name was inspired by an indigenous group, the Pijaos, who have lived around the Tolima volcano for centuries. They referred to the volcano as ‘Dulima’, meaning Snow Queen, due to the white snow that sits on the peak of the volcano.
However, Hulia doesn’t just produce great coffee due to its physical landscape and climate; it also requires skilled farming to consistently produce top-notch beans. The farmers in Hulia are very attentive with their crops and are embracing new processing and agricultural techniques. By doing this, they can quickly apply and adapt anything which could help improve or retain the quality of their coffee.
These beans have been processed using the washed method, which is typical of Colombian coffees, as water is readily available. This method is also favoured as it is less labour-intensive than the naturally processed alternative, and the washed method tends to complement the flavours found in Dulima coffee. This washed method is the most popular way to process coffee, as it allows you to taste the quality of the beans themselves, rather than fruity and funky flavours that they have absorbed from the natural method.

What does the score mean?
Cupping is the process used to find the ‘quality’ score of a coffee. Because we only source and roast speciality coffee, it must get a score of 80 points or higher to be granted speciality status. Roasting
When roasting, we never ‘over roast’ any of our coffees, simply because we don’t need to. The process of roasting is a great way to highlight some of the natural flavours and aromas of the coffee. Roasting a coffee too dark can result in these flavours being hidden and, instead, can produce a bitter and burnt coffee. The coffee we source is of very high quality. This allows us to bring out the flavours when roasting, rather than trying to hide them. Instead of having a burnt or bitter taste, our coffees have a natural sweetness.
Every coffee we hand roast is completely unique. Some coffees we roast have lighter notes, like citrus fruit, whilst others have a slightly darker note of chocolate or nut for example. We source our coffee from small farms and cooperatives around the world. These farmers and their workers work incredibly hard to produce an excellent product. We feel it’s only fair that we produce an equally amazing product.
